Description

Delicious crispy tofu tacos loaded with fresh veggies and a spicy kick.


Ingredients

Scale
  • 1 block (14 oz) extra-firm tofu
  • 4 whole grain or gluten-free tortillas
  • 1 cup bell peppers, sliced
  • 1 cup lettuce, shredded
  • 1 cup tomatoes, diced
  • 1 ripe avocado, sliced
  • 2 tbsp soy sauce (low-sodium)
  • 1 tbsp lemon juice (freshly squeezed)
  • 1 tsp paprika
  • 1 tsp cumin
  • 2 tbsp olive oil
  • Sriracha or hot sauce to taste

Instructions

  1. Press the tofu between paper towels for at least 30 minutes to remove excess moisture. Cut into bite-sized cubes.
  2. In a bowl, mix the soy sauce, lemon juice, paprika, and cumin. Toss the tofu cubes in the marinade until evenly coated.
  3. Heat olive oil in a non-stick skillet over medium-high heat. Cook the marinated tofu cubes for about 6-8 minutes until golden brown and crispy.
  4. While the tofu cooks, prepare your vegetables by slicing them thinly.
  5. On each tortilla, layer crispy tofu, fresh veggies, avocado slices, and drizzle with Sriracha if desired.
  6. Fold the sides of the tortilla inward and roll tightly from one end to another. Slice in half diagonally and enjoy!

Notes

  • Feel free to adjust the spice level by adding more or less Sriracha.
  • These tacos can be served with a side of salsa or guacamole.
