Description
Delicious crispy tofu tacos loaded with fresh veggies and a spicy kick.
Ingredients

- 1 block (14 oz) extra-firm tofu
- 4 whole grain or gluten-free tortillas
- 1 cup bell peppers, sliced
- 1 cup lettuce, shredded
- 1 cup tomatoes, diced
- 1 ripe avocado, sliced
- 2 tbsp soy sauce (low-sodium)
- 1 tbsp lemon juice (freshly squeezed)
- 1 tsp paprika
- 1 tsp cumin
- 2 tbsp olive oil
- Sriracha or hot sauce to taste
Instructions
- Press the tofu between paper towels for at least 30 minutes to remove excess moisture. Cut into bite-sized cubes.
- In a bowl, mix the soy sauce, lemon juice, paprika, and cumin. Toss the tofu cubes in the marinade until evenly coated.
- Heat olive oil in a non-stick skillet over medium-high heat. Cook the marinated tofu cubes for about 6-8 minutes until golden brown and crispy.
- While the tofu cooks, prepare your vegetables by slicing them thinly.
- On each tortilla, layer crispy tofu, fresh veggies, avocado slices, and drizzle with Sriracha if desired.
- Fold the sides of the tortilla inward and roll tightly from one end to another. Slice in half diagonally and enjoy!
Notes
- Feel free to adjust the spice level by adding more or less Sriracha.
- These tacos can be served with a side of salsa or guacamole.
