Description

A hearty dish featuring ground beef and roasted butternut squash, seasoned with cumin and smoked paprika.


Ingredients

  • 1 lb lean ground beef
  • 2 cups butternut squash, peeled and diced
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 2 tsp cumin
  • 1 tsp smoked paprika
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh herbs (parsley or cilantro) for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, pepper, cumin, and paprika in a bowl.
  3. Spread the seasoned squash on a baking sheet and roast for 25-30 minutes until tender.
  4. In a skillet over medium heat, sauté onions in olive oil until translucent; add minced garlic.
  5. Increase heat and add ground beef, cooking until browned (6-8 minutes).
  6. Combine the roasted squash with the beef mixture; adjust seasoning as needed.
  7. Serve hot in bowls garnished with fresh herbs.
