Delicious mini muffins made with breakfast sausage and cheddar cheese.
Ingredients

- 1 lb breakfast sausage
- 1 cup Bisquick
- ½ cup sour cream Ranch dip (I use Daisy)
- ½ cup shredded cheddar cheese
Instructions
- Preheat oven to 375ºF. Spray a mini muffin pan with cooking spray.
- Cook sausage in a large skillet over medium high heat until no longer pink. Drain excess grease.
- In a large mixing bowl, stir together cooked sausage, Bisquick baking mix, Ranch dip, and shredded cheese.
- Use a medium cookie scoop and scoop the sausage mixture into the prepared pan.
- Bake for 15 to 18 minutes, until golden brown. Garnish with parsley.

- Feel free to add other ingredients like bell peppers or onions for extra flavor.
