Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together flour, cocoa powder, baking soda, ground ginger, and a pinch of salt.
- In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
- Beat in the egg and fresh ginger into the butter mixture until combined.
- Gradually fold in dry ingredients until just combined; avoid over-mixing.
- Gently fold in the chocolate chips.
- Scoop dough onto lined baking sheets about two inches apart.
- Bake for 10-12 minutes until edges are set but centers remain soft.
