Deliciously soft and chewy chocolate cookies infused with ginger for a unique flavor.

Ingredients

Scale
  • 1 ¾ cups all-purpose flour
  • ½ cup unsweetened cocoa powder
  • 1 tsp ground ginger
  • 2 tbsp fresh ginger, grated
  • ½ cup unsalted butter, softened
  • ½ cup granulated sugar
  • ½ cup brown sugar, packed
  • 1 large egg
  • 1 tsp baking soda
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together flour, cocoa powder, baking soda, ground ginger, and a pinch of salt.
  3. In another bowl, cream the softened butter with granulated and brown sugars until fluffy.
  4. Beat in the egg and fresh ginger into the butter mixture until combined.
  5. Gradually fold in dry ingredients until just combined; avoid over-mixing.
  6. Gently fold in the chocolate chips.
  7. Scoop dough onto lined baking sheets about two inches apart.
  8. Bake for 10-12 minutes until edges are set but centers remain soft.

Notes

  • Store in an airtight container to maintain softness.
