Description

This hearty taco soup is perfect for a cozy dinner. Packed with protein and flavor, it’s a must-try!


Ingredients

  • 1 lb lean ground beef or turkey
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 can (14 oz) fire-roasted tomatoes
  • 1 can (15 oz) black beans, rinsed
  • 1 cup frozen corn
  • 2 tbsp taco seasoning
  • 4 cups low-sodium chicken broth
  • Fresh cilantro (optional)

Instructions

  1. In a large pot over medium heat, drizzle olive oil and sauté the diced onion until translucent.
  2. Add garlic and cook until fragrant.
  3. Push onions and garlic aside; add ground meat and brown for about 5-7 minutes.
  4. Stir in tomatoes (with juices), rinsed beans, corn, taco seasoning, and chicken broth; mix well.
  5. Bring to a boil then reduce heat to low; simmer uncovered for 20-25 minutes.
  6. Adjust seasoning as needed before serving. Top with cilantro if desired.
