A delicious lemon cake layered with strawberry frosting.
Ingredients

- 2 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- ½ teaspoon salt
- 1 ¾ cups granulated sugar
- 1 cup unsalted butter, softened
- 4 large eggs
- ⅓ cup fresh lemon juice
- 2 tablespoons lemon zest
- 1 cup buttermilk
- 1 teaspoon vanilla extract
- 1 ½ cups fresh strawberries, pureed
- 4 cups powdered sugar
- 8 ounces cream cheese, softened
Instructions
- Preheat oven to 350°F and grease three 8-inch round cake pans.
- In a large bowl, cream butter and sugar until fluffy.
- Beat in eggs one at a time, then add lemon juice, zest, and vanilla.
- In another bowl, whisk flour, baking powder, and salt.
- Alternate adding dry ingredients and buttermilk into the wet mixture.
- Divide batter evenly into pans and bake for 25–30 minutes or until a toothpick comes out clean.
- Let cakes cool completely on a wire rack.
- Puree strawberries and strain excess liquid.
- Beat cream cheese and butter until smooth.
- Add powdered sugar gradually, then mix in strawberry puree. Chill frosting.
- Spread frosting between layers and on top of the cake.
- Garnish with lemon slices or extra strawberries if desired.
