Ingredients

  • 4 boneless, skinless chicken breasts
  • 8 oz penne pasta
  • 2 chipotle peppers in adobo sauce (minced)
  • 1 cup heavy cream
  • 4 cloves fresh garlic (minced)
  • 1 medium onion (chopped)
  • 1 cup grated Parmesan cheese
  • ¼ cup fresh cilantro (chopped)
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Boil salted water in a large pot and cook penne according to package instructions until al dente. Drain and set aside.
  2. Sauté Chicken: Heat olive oil in a skillet over medium-high heat. Season chicken breasts with salt and pepper, then cook for about 6-7 minutes on each side until fully cooked. Remove from skillet and slice into strips.
  3. Add Aromatics: In the same skillet, sauté chopped onions and minced garlic until golden brown.
  4. Create the Sauce: Stir in minced chipotle peppers and heavy cream; let simmer for about 5 minutes until slightly thickened.
  5. Combine: Return sliced chicken to the skillet along with drained pasta, mixing well to coat everything in the sauce.
  6. Finishing Touches: Stir in grated Parmesan cheese until melted and garnish with chopped cilantro before serving hot.
