Description

Delicious beef enchiladas topped with cheese and sour cream.


Ingredients

  • 1 lb lean ground beef
  • 8 flour or corn tortillas (whichever you prefer)
  • 2 cups enchilada sauce (store-bought or homemade)
  • 1 cup shredded cheddar or Monterey Jack cheese
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 tsp cumin
  • 1 tsp chili powder
  • to taste Sour cream (for topping)

Instructions

  1. Heat a large skillet over medium heat and add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain excess grease.
  2. Stir in the cumin and chili powder, cooking for another minute to bloom the spices.
  3. Assemble the enchiladas: Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
  4. Pour the enchilada sauce over the rolled tortillas and top with shredded cheese.
  5. Bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
  6. Top with sour cream, guacamole, cilantro, or other desired toppings before serving.
