Delicious beef enchiladas topped with cheese and sour cream.
Ingredients

- 1 lb lean ground beef
- 8 flour or corn tortillas (whichever you prefer)
- 2 cups enchilada sauce (store-bought or homemade)
- 1 cup shredded cheddar or Monterey Jack cheese
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 tsp cumin
- 1 tsp chili powder
- to taste Sour cream (for topping)
Instructions
- Heat a large skillet over medium heat and add the ground beef, diced onion, and minced garlic. Cook until the beef is browned and the onions are soft, about 5-7 minutes. Drain excess grease.
- Stir in the cumin and chili powder, cooking for another minute to bloom the spices.
- Assemble the enchiladas: Spoon the beef mixture onto each tortilla, roll tightly, and place seam-side down in a greased baking dish.
- Pour the enchilada sauce over the rolled tortillas and top with shredded cheese.
- Bake at 375°F (190°C) for 20-25 minutes, or until the cheese is melted and bubbly.
- Top with sour cream, guacamole, cilantro, or other desired toppings before serving.

- You can customize the toppings based on your preference.
- Feel free to use homemade enchilada sauce for extra flavor.
