- 1 lb mushrooms
- 4 cloves garlic
- 1 medium onion
- 2 tablespoons butter
- 1 tablespoon olive oil
- 2 tablespoons flour
- 2 cups vegetable broth
- 3/4 cup sour cream
- 1 tablespoon Dijon mustard
- 1 teaspoon paprika
- 1/2 teaspoon dried thyme
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 10 oz pasta
- 2 tablespoons chopped parsley
Instructions
- Heat butter and olive oil in a large skillet over medium heat. Add chopped onions and cook until soft.
- Stir in garlic and cook until fragrant, about 30 seconds.
- Add sliced mushrooms and let them brown undisturbed. Stir and cook until golden and moisture evaporates.
- Sprinkle flour and stir to coat mushrooms evenly.
- Slowly add vegetable broth while stirring. Add mustard, paprika, thyme, salt, and pepper. Simmer until thickened.
- Reduce heat and stir in sour cream gently until warmed through. Do not boil.
- Cook pasta until al dente, drain, and add to sauce. Toss to coat.
- Sprinkle with chopped parsley before serving.
Notes
- For added flavor, you can use fresh herbs.
