Instructions
- Peel and cut potatoes into chunks and boil with garlic cloves in salted water for 15 minutes until fork tender then drain well.
- Mash hot potatoes and garlic until smooth breaking down all lumps before adding dairy.
- Add butter and let it melt then gradually mix in milk and sour cream until creamy adjusting for texture.
- Season with salt and pepper and mash gently just until combined to avoid overmixing.
- Serve warm with parsley and extra butter if desired.
