- 1 ¼ cup flour
- ¼ cup sugar
- ¾ tsp baking powder
- ½ tsp salt
- ¼ tsp cinnamon
- 1 cup light beer
- 1 egg
- 2 Tbsp oil
- ½ tsp vanilla extract
Instructions
- Dries: In a small bowl, stir together 1 ¼ cup flour, ¼ cup sugar, ¾ tsp baking powder, ½ tsp salt, and ¼ tsp cinnamon.
- Wets: In a separate large bowl, stir together 1 cup light beer, 1 egg, 2 Tbsp oil, and ½ tsp vanilla extract.
- Mix: Add the dry ingredients to the wet ingredients, stirring just until combined (it’s okay if the batter is a little lumpy).
- Cook: Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about ¼ cup for each pancake. Cook 3 to 5 minutes on each side, or until lightly browned.
- Serve warm with your favorite pancake toppings.
Notes
- For a sweeter taste, consider adding chocolate chips or blueberries to the batter before cooking.
