Description

Ingredients

  • 1 ¼ cup flour
  • ¼ cup sugar
  • ¾ tsp baking powder
  • ½ tsp salt
  • ¼ tsp cinnamon
  • 1 cup light beer
  • 1 egg
  • 2 Tbsp oil
  • ½ tsp vanilla extract

Instructions

  1. Dries: In a small bowl, stir together 1 ¼ cup flour, ¼ cup sugar, ¾ tsp baking powder, ½ tsp salt, and ¼ tsp cinnamon.
  2. Wets: In a separate large bowl, stir together 1 cup light beer, 1 egg, 2 Tbsp oil, and ½ tsp vanilla extract.
  3. Mix: Add the dry ingredients to the wet ingredients, stirring just until combined (it’s okay if the batter is a little lumpy).
  4. Cook: Heat a large nonstick skillet over medium heat. Pour batter into skillet, using about ¼ cup for each pancake. Cook 3 to 5 minutes on each side, or until lightly browned.
  5. Serve warm with your favorite pancake toppings.
