Ingredients

- 12 cloves garlic
- 1 tablespoon olive oil
- 1 medium yellow onion
- 1 teaspoon thyme (dried or 1 sprig fresh)
- 1 bay leaf
- 4 cups vegetable broth
- 2 egg yolks
- 4 slices crusty bread
- 0 teaspoon salt
- 0 teaspoon black pepper
Instructions
- Peel garlic cloves and thinly slice onion. In a large pot, heat olive oil over medium heat.
- Add garlic and onion. Sauté gently for 10 to 12 minutes until softened and fragrant, not browned.
- Add thyme, bay leaf, and vegetable broth. Bring to a boil, then reduce heat and simmer for 30 to 35 minutes.
- If desired, blend the soup until smooth using an immersion blender, or leave it rustic.
- In a small bowl, whisk egg yolks. Slowly temper them with hot soup, then return mixture to the pot.
- Stir well to combine. Remove bay leaf and season with salt and pepper.
- Serve hot with crusty bread on the side or soaked in the bowl.
Notes
- This soup can be blended smooth or left chunky according to preference.
- Adjust seasoning to taste.
