Description

A delicious and hearty Butternut Squash Orzo dish perfect for fall!


Ingredients

  • 2 cups butternut squash (peeled and cubed)
  • 1 cup orzo pasta
  • 4 cups low-sodium vegetable broth
  • 1 cup freshly grated Parmesan cheese
  • 2 tablespoons fresh sage (chopped)
  • 1 medium yellow onion (diced)
  • 3 cloves garlic (minced)
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Toss butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 25 minutes until tender.
  2. In a large skillet, heat olive oil over medium heat. Sauté diced onion until translucent (about 5-7 minutes), then add minced garlic for another minute.
  3. Stir in uncooked orzo for two minutes, then gradually add vegetable broth while stirring.
  4. Cook for about 10-12 minutes until the orzo absorbs most of the broth. Add roasted butternut squash and chopped sage; mix gently.
  5. Remove from heat and stir in Parmesan cheese until melted. Adjust seasoning if necessary before serving hot.
