Delicious ribeye steaks topped with a flavorful cowboy butter made with herbs and spices.

- 2 ribeye steaks (1-inch thick)
- 6 tablespoons unsalted butter
- 3 cloves garlic, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon smoked paprika
- 1 teaspoon red pepper flakes
- 2 tablespoons chopped fresh parsley
- 1 tablespoon chopped chives (optional)
- 1 teaspoon kosher salt
- 1 teaspoon freshly ground black pepper
- 1 tablespoon olive oil (for searing)
Instructions
- Pat steaks dry and season both sides with salt and pepper. Let them rest at room temperature for 20–30 minutes.
- In a small saucepan, melt butter over low heat. Add garlic, lemon juice, Dijon mustard, smoked paprika, red pepper flakes, parsley, and chives. Simmer gently for 2–3 minutes, then remove from heat.
- Heat a cast iron skillet over medium-high heat. Add olive oil.
- Sear steaks for 3–4 minutes per side for medium-rare, or longer for desired doneness.
- Let the steaks rest for 5 minutes.
- Slice the steaks and pour warm cowboy butter over the top. Serve immediately.

- Allow steaks to rest after cooking for the best texture.
- Customize the seasoning in the cowboy butter to your preference.
