A delicious and hearty cheesy chicken and black bean pasta bake that the whole family will love.
Ingredients

- 3–4 boneless, skinless chicken breasts (about 1 lbs)
- 8 oz penne or rotini pasta
- 1 can (15 oz) black beans, rinsed
- 1 cup chopped bell peppers (mix of colors)
- 2 cups shredded sharp cheddar cheese
- 1 cup salsa
- 2 tsp olive oil
- 1 tsp cumin
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- Fresh cilantro (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- In a large skillet over medium heat, add olive oil and diced chicken. Cook until browned and no longer pink.
- Stir in chopped bell peppers and black beans. Season with cumin, paprika, garlic powder, and onion powder; cook until peppers soften.
- In a large bowl, combine cooked pasta with the chicken and vegetable mixture. Mix in salsa until well-coated.
- Transfer to a baking dish and top with shredded cheddar cheese.
- Bake for 20–25 minutes until the cheese is bubbly and golden brown.
Notes
- Feel free to adjust the spice levels by adding more or less cumin and paprika.
- Fresh cilantro can be added as a garnish before serving.
