Description
A delicious mixture of cherry tomatoes, gnocchi, butter beans, and Boursin cheese baked together for a comforting dish.

- 1 package (16 oz) cherry tomatoes
- 1 package (16 oz) gnocchi
- 1 can (15 oz) butter beans (drained)
- 1 jar (24 oz) marinara sauce
- 1 block Boursin cheese (garlic and fine herbs flavor, 5 oz)
- 1 cup fresh chopped basil
Instructions
- Preheat oven to 400°F (204°C). Halve some of the cherry tomatoes and leave others whole.
- Into a large (9×13 inch or similar) casserole dish, dump the tomatoes, gnocchi, butter beans, marinara sauce, Boursin cheese, and fresh chopped basil. Gently stir to combine (it’s okay if the cheese isn’t fully blended).
- Tightly cover with aluminum foil and bake for 15 minutes. Stir to mix everything up, then return to the oven uncovered for 10 to 15 more minutes. It’s finished when the gnocchi is fork-tender!
- Serve warm, topped with fresh basil and cracked black pepper.
Notes
- For a spicier version, add red pepper flakes to the mix.
- This dish can be prepared ahead of time and baked just before serving.
