Description

A delicious baked egg dish perfect for breakfast or brunch.


Ingredients

  • 4 large eggs
  • ½ cup cottage cheese
  • ¼ cup shredded cheddar or mozzarella (optional)
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • chives or green onions, chopped
  • cherry tomatoes, halved (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish or ramekins with butter or cooking spray to prevent sticking.
  2. In a mixing bowl, whisk the eggs until smooth. Stir in the cottage cheese, salt, black pepper, garlic powder, and paprika. Mix well until everything is evenly combined.
  3. If using cherry tomatoes, fold them into the egg mixture. Pour the mixture into the greased baking dish, ensuring an even distribution. Sprinkle shredded cheese on top if you prefer an extra cheesy dish.
  4. Place the baking dish in the preheated oven and bake for 20–25 minutes, or until the eggs are fully set and slightly golden on top. A toothpick inserted in the center should come out clean.
  5. Once baked, remove the dish from the oven and let it sit for a couple of minutes. Sprinkle chopped chives or green onions on top for a fresh finish. Serve warm with a side of toast, avocado, or fresh greens.
