Ingredients

  • pinch of salt
  • ½ tbsp zero-calorie sweetener (like stevia or monk fruit)
  • ¼ cup fresh or frozen blueberries

Instructions

  1. Preheat your oven to 350°F (175°C) and lightly grease your ramekin or small oven-safe bowl.
  2. In a small mixing bowl, whisk together the cottage cheese, egg, vanilla extract, sweetener, and a pinch of salt. Stir until well combined. It won’t be completely smooth, and that’s okay—the texture adds to the final dish.
  3. Gently fold in the blueberries so they don’t break apart. If using frozen, no need to thaw—just toss them right in.
  4. Pour the mixture into your prepared ramekin. Place it on a baking sheet to catch any potential spillover and bake for 30–35 minutes, or until the top is golden and the center is just set.
  5. Cool slightly and serve it after 5 minutes. Enjoy warm as-is or top with a dollop of Greek yogurt or a drizzle of almond butter.
