- ½ cup low-fat cottage cheese
- 1 egg
- ½ tsp vanilla extract
- pinch of salt
- ½ tbsp zero-calorie sweetener (like stevia or monk fruit)
- ¼ cup fresh or frozen blueberries
Instructions
- Preheat your oven to 350°F (175°C) and lightly grease your ramekin or small oven-safe bowl.
- In a small mixing bowl, whisk together the cottage cheese, egg, vanilla extract, sweetener, and a pinch of salt. Stir until well combined. It won’t be completely smooth, and that’s okay—the texture adds to the final dish.
- Gently fold in the blueberries so they don’t break apart. If using frozen, no need to thaw—just toss them right in.
- Pour the mixture into your prepared ramekin. Place it on a baking sheet to catch any potential spillover and bake for 30–35 minutes, or until the top is golden and the center is just set.
- Cool slightly and serve it after 5 minutes. Enjoy warm as-is or top with a dollop of Greek yogurt or a drizzle of almond butter.
